How we process our peanuts?

Roasted Peanuts

As soon as peanuts are harvested and arrive in the factory processing begins.  Peanuts come from farmers in Java and close by Bali and Lombok. Buying from areas further away introduces the risk of degradation of the peanuts due to the increased time spent in getting to the factory.

First the inshell peanuts are washed to remove soil and roots. In the old days washing was done by immersing the peanuts in a pool and manually sifting out the soil. These days a fully mechanized process takes care of the hard work and human involvement is reduced to final visual checks and machine operation.

The inshell peanuts are boiled and salted before continuing their conveyor belt journey to the drying rooms.

Mid drying, peanuts are graded and sorted by hand. Export quality peanuts are chosen for consistency in size and shape. Any that are discolored, too small, too large or misshapen will be rejected. Large peanuts can be problematic when it comes to packing.

Peanuts bound for the export market will proceed to the final drying processor, a machine the length of a football field where the peanuts will emerge after three days with an optimal-for-eating 1 - 1,5 per cent moisture content.

To maintain the freshness and flavor of the peanuts they are stored in a chilled warehouse where they can remain for up to six months if necessary.

Locally bound peanuts are diverted to a processing room to be seasoned with garlic or orange leaves or other seasoning before being packed, labeled and stacked to await transport by truck to shops and supermarkets throughout Indonesia.  

Coated Peanuts

Fifty tumblers are used for applying coating to the peanuts. The coating and flavouring are added manually. From the tumblers the snacks pass along a vibrating tray that takes out particles and prevents clumping of the coated peanuts before they are deep fried.

Flour-based and Vege Snacks

Tics Tacs are flour-based snacks that undergo a process of moulding and cutting before they are fried and flavoured and sold as Original, Roasted Shrimp, Chilli or Grilled Beef. Broad beans, peas and corn kernels are the main ingredients in My Corn and Krip Krip.
